Kale is a form of cabbage that is a rich source of carotenoids, including beta-carotene, lutein and zeaxanthin. It is high in Vitamin C, K, folic acid, and is also a good source of calcium and potassium. Kale contains sulfur compounds (glucosinolates and I3C) and contains over 45 flavonoids like kaempferol and quercetin. It is a good general alkalizer due to the high potassium ad low sodium content.
